Salmon à la Meunière

2 salmon fillets
1 tbs milk
1 tbs plain wholemeal flour
1/2 oz butter

Dip the salmon fillets first in the milk, then in the flour, then fry in the butter. Quite the nicest way of cooking any sort of fish, if you ask me - or even if you don't!

1 served this with cabbage, broccoli, 3-orange mash (sweet potatoes, swede - rutabaga - and carrot boiled together and mashed with salt & pepper and a dollop of reduced-fat crème fraîche), and 1/2 packet of lemon butter sauce.

That *does* sound tasty. I'm assuming wholemeal flour is the same thing as whole wheat flour?

Yes, that's the stuff. And plain flour is the kind that (a) doesn't have any raising agent added and (b) isn't the "strong" flour used for breadmaking.
